We provide specialty foods to restaurants, grocery stores, CSAs, porch pickups, and farmer's markets in the St. Louis area. We specialize in distributing unique mushroom varieties, and wild edibles alongside the products we grow on our family farm. We are deeply committed to sustainable practices. Our farm, located in Timber, Missouri, produces many unique foods including the product we are most known for, our log grown shiitake

Our 500 acre family farm, Timber Farms - The Sinks, is located in the Big Springs Region of the Southern Missouri Ozarks. This truly wild and beautiful area abounds with vast tracts of oak forest, clear springs, caves, and sparkling streams. We discovered the humid microclimate and oak/hickory forest along Sinking Creek, which runs through our farm, provides ideal conditions and substrates for cultivating shiitake mushrooms. In 1986 we started Ozark Forest Mushrooms and began cultivating shiitake's on the oak logs from the farm and surrounding areas commercially. By blending Ozark ingenuity, traditional Japanese techniques, evidence based sustainability philosophies, and a lot of hard work we have expanded our shiitake production to over 25,000 logs. We take pride in our sustainable forestry program which provides a renewable supply of oak logs for our shiitake production. This does not contribute to clear felling, but maintains our forest in a healthy ecological state. We also produce oyster mushrooms, lion's mane mushrooms, tomatoes, basil, peppers, and a wide variety of value added products.
